
The Pandemic Staple. A recipe worked on during the hectic time of SARS-CoV-2.
Inspired by the BBC’s goodFood Website, this recipe for Banana Bread has a few conscious ingredient swaps. Ingredients can make a world of difference to the nutrition value of our sweet treats. A justification of the ingredients is provided at the end of the page.
Ingredients
- 140g softened butter
- 140g dark brown sugar
- 2 large eggs
- 140g almond flour (for a low fat option use oat flour)
- 1 teaspoon of baking powder
- 2 ripe bananas
- 5ml Vanilla Extract
- handful of walnuts
Method (10 steps)
- Beat 2 large eggs until frothy.
- To the beaten eggs, add 140g of dark brown sugar and 140g of butter and beat till light and fluffy.
- Separately, mash 2 ripe bananas.
- Add the mashed bananas to the wet ingredients and fold.
- Add the 140g almond flour, a teaspoon of baking powder and the vanilla extract to the wet ingredients and mix.
- Preheat the oven to 180C /160C fan/ gas 4 for 10 minutes.
- Meanwhile, line a 2lb loaf tin with baking parchment paper.
- Pour the mixture into the loaf tin and place on the middle tray of your preheated oven for 40 minutes to bake.
- Leave to cool for 10 minutes.
- Decorate with a handful of crushed walnuts.
